Balsamic honey chicken and veggies

I'm not sure if that's really the name but amazing is a better name for this ! I made it last night for dinner and even Sean approved !  I modified slightly due to the 21 day fix so I'll include both recipes ! 


  1. 1 pound chicken breast or tenders 
  2. 1/4 c Italian dressing ** I changed this to Italian seasoning** 
  3. 2 tablespoons balsamic vinegar 
  4. 1 tablespoon honey 
  5. 1/8 teaspoon crushed red pepper 
  6. 1 small onion sliced 
  7. 1 tomatoe diced 
  8. Asparagus cut in 1 in pieces 
  9. ** you could add any veggies really! 


  10. 1) In a small bowl, stir together salad dressing, balsamic vinegar, honey, and crushed red pepper. Set aside.
  11. 2) In a large skillet, heat olive oil over medium-high heat. Add chicken; cook until chicken is tender and no longer pink, turning once. Add half of the dressing mixture to skillet; turn chicken to coat. 
  12. 3) Remove chicken and place on plate 
  13. 4) Add asparagus and onion to skillet. Cook and stir for 3 to 4 minutes or until asparagus is crisp-tender;  add tomatoe and chicken Stir remaining dressing mixture;  Cook and stir for about a min . 

I served this with cilantro brown rice !! Absolutely hit the spot ! 

If your a fixer remember to measure your chicken and veggies out and 1 tsp for the olive oil  !
